I don't know how I could survive without eggs. In eco- and nutrionally nurishing living eggs are a cheap way to get animal protein and fat soluble vitamins into your body. When picking eggs the highest quality matters. A friend of mine who cares about these issues told me if I had the choice between 10 factory farmed eggs and 1 pastured raised egg, he would choose the pastored raised eggs. This is because the nutrional value of these eggs are multiple times higher in good fats and high amounts of vitamins we can't find from in agreat amount from plant sources, such as vitamin E, vitamin A, vitamin D and EPA an omega three(a simpler form is found in high quality plant oils).
In total good eggs contain 13 different vitamins.
Based on tests from Mother Earth News comparing pastured raised farms to commericial farms and taking the average they concluded that the pastured raised eggs can contain:
• 1/3 less cholesterol• 1/4 less saturated fat• 2/3 more vitamin A• 2 times more omega-3 fatty acids• 3 times more vitamin E• 7 times more beta carotene
They also dispell propoganda commercial manufacturers use to either claim their eggs are pasture raised or their use of government organizations or related organizations to deny the true health benefits.
I don't think I've ever tasted a pastured raised egg and there are no commercial brands in Korean. But there are ways to get high quality eggs. You'll pay more but that's the price you pay for quality and optimum nutrition. And ethics, too. I've tried these anti-biotic free brands of eggs in Korea below. And there are no nutritonal tests I have access to show nutritional grow.
There are two ways to test.
One, is by sight. A great egg will have a strong yolk that stands up. It should be a very strong orange. A poorer quality egg will look yellow in comparison.

You can't rely on this alone because some unethical companies will add dies to the eggs and who knows what they will think of in the future.
Second, is to use your taste buds to distinguish between delicious and bland is simple way to distinguish a quality egg is to buy a more expensive brand and a cheaper brand. I bought a respected organic producer and a generic label who both sold anti-biotic free eggs.
Try one brand.
Does it taste rich. Does it have good flavor?
Now compare it to the other.
Can you tell the difference now?
In order to do this you have to cook the egg gentler as a burnt up egg will lose a lot of nutrition and there is no point.
