Culinary Adventures in Seoul Part 1

In order of personal impact:

"Fermentation Festival: The Fire"

It took me a few days to fully recover from Fermentation Festival 2 on June 18th. J's blog about the experience reads like a crime report. I think one of the reasons for this was our obsession with things done right. The rest were miscommunications and the limit resources we had.

We emphasized taste and next time I hope to bring even more quality to what I do next time.

I believe that organic food should be delicious food and even french fried potatoes can be healthy in an integrated diet. French Fries at McDonalds were healthier when fried in beef tallow until 1990 (Fast Food Nation). They were also tastier. But soy was cheaper and replaced it. However, animal fat is a much more satisfying and is less processed than vegetable oil. It's safe to fry with because saturated fat is stable. Everybody before the 20th century used animal fat..

My thinking is very simple for the next events push. I want to do the same but next time I want my food in organic animal fat. It so right and so simple. There is nothing more anti-industry than rejected vegetable oils for something natural.

This is not stuff that stays dead on a self like vegetable oil. I want organic animal fat to fry in.It's tastes delicious. And its nourishing. I want to make fast food that is nourishing stuff and delicious.

Also, I would like to find reliable organic sources for some of my key ingredients by establishing the relationships with farmers who meet and know are true believers in what they do.

Also, I would like to do this on a small local level.

But really the reason why I am doing this is because this is how it was done and this is how it should be done. Life is more enjoyable when your food is delicious and nourishing.

 The commitment to fermentation festival 2 has made this hobby rather intensive. Now is time to step up. Their is now some opportunities to make money from what I am doing.  This was the goal for my initial investment and I've gotten it. Two bars have offered me opportunities to sell my products to them.

I have very little free time to waste and many things to do so I'm trying to do many things and still balance my life. So far so good.

  Coming up:

Yesterday, my friend M and I spent some time together whilst I went to meetings at two bars Habaechon. I'll be writing about the adventures we had with Habaechon characters and restaurants for good or bad at some point and  and well as my discovery of the mountaintop of fermented foods with J, who knew about it way before me.
